Yamadashouten TAMAKASHIWA Junmai Ginjo "288 Nights"
Named "288 Nights" for the time the current head brewer, Uno san, first spent relearning about sake making from the previous head brewer, Takakura san.
A pure rice Ginjo sake that actually qualifies as a Daiginjo with 50% rice polishing, made with Gohyakumangoku sake rice from Niigata, with a gentle apple aroma and refreshing taste. Clean and neat, but the flavours get drawn out with each sip.
