The West Winds Gin - Sur Lie

Aged 12 months on Chardonnay lees in a barrel sourced from Fishbone Wines, this gin has a creamy mouth feel with subtle native Australian wattleseed and Oak touches.

Only a limited number of bottles has been produced.

The name ‘Sur Lie’ translates literally to ‘Aged on Lees’, a term used in French wine making.

Tasting Note:

• The resulting gin has beautiful floral notes with hints or Coriander, Lemon and Cinnamon Myrtle.
• Producing an underlying vanilla character which softens out the nose and adds complexity.
• The palate is rich and flavour some. The addition of the lees gives this gin a lovely softness and length producing a gin with exceptional balance and interest.
