Tentaka Tokubetsu Junmai "Hawk In The Heavens"
A go-to sake for barbeque, this rustic, high acid sake is a great representation of traditional Junmai style that you would find in Izakayas throughout Japan. The brewery name, Tentaka, translates to “hawk in the heavens,” a prosperous Japanese symbol that is thought to bring good fortune to the brewery.
Although many might enjoy Hawk in the Heaven chilled, we would like you to try drinking it at room temperature. You will find the umami flavour easier to spread on your tongue than when it’s chilled. As per food pairing for this bottle, something with a noticeable umami flavour would be fun. Something like cheese or raw oysters, would be examples of food with amino acids. Cream cheese risotto is also a great dish to enjoy this sake with!
Tasting Note :
Dry and crisp, the flavours are dominated by mixed nuts, fresh cut green grass and other earthier flavours. Very pleasing for those who want fresh sake flavour, but more complexity beyond the fermented fruit flavours.
Food Pairing :
Pairs well with hearty grains, mushrooms, beef, lamb, and BBQ sauce.
